Apple panna cotta ingredients:

12 grams of sugar (one tablespoon)
1 peeled and chopped apple
1 teaspoon cinnamon
100 ml apple juice

CONDENSED MILK
150 ml of water
75 grams of sugar
150 ml milk
2 sheets of gelatin

RED COLOR GLAZE:
100 grams white chocolate
5 drops of red food coloring

FOR CREAM
75 grams of whipped cream
200 ml cream
200 grams of chocolate
5 frozen apples (for the mold)

How to make apple panna cotta:

1. Add a teaspoon of sugar (12grams) to a pan heated over high heat and caramelize the sugar.

2. Peel and dice one apple. Add 1 teaspoon of cinnamon to the chopped apples you add to the pan. Finally, add 100 ml of apple juice and wait for it to boil.

3. Set aside to cool.

4. CONDENSED MILK: Add 150 ml of water, 75 grams of sugar and 150 ml of milk to a saucepan and stir until boiling.

5. Soak 2 gelatins in a bowl of cold water. Add the softened gelatin to the hot milk and stir until thickened.

6. In a separate bowl, add the hot condensed milk to 100 grams of white chocolate.

7. Add 5 drops of red food coloring to the glaze. Mix with a mixer until the color changes.

8. FOR THE CREAM: Mix 75 grams of whipped cream and 200 ml of cream with a mixer.

9. Freeze 5 apples in the freezer for 4 hours.

10. Melt 200 grams of chocolate in a bain-marie and put it in a bowl.

11. Dip the frozen apples in the chocolate and wait for the chocolate to set. It will be completely frozen in 1 minute at most. Then remove the chocolate from the apple.

12. Pipe the cream into the chocolate mold and add the apple sauce in the center. Pipe on both sides and then join them together.

13. Spread chocolate where you joined them together. Apply carefully and slowly. Because the chocolate is hot, it can melt.

14. Finally, pour red glaze over the top and refrigerate for 15 minutes.
